Banana Pup Cups | Let’s Celebrate!

Ollie turns five tomorrow and that’s cause to celebrate! He’s our favorite little clown, who loves to sing, still suckles his “Precious” fleece toy, bounces like a little jumping bean when he sees his favorite humans, and he always has time for a good bum scratch!

We adopted him when he was just 13 weeks old, a puppy mill rescue with a special back foot. He has been a great side kick for Stevie and keeps us all laughing!

In honor of his birthday I created a frozen dog treat recipe, which was really easy to make and only has four all-natural ingredients!

Banana Pup Cakes
makes 7 frozen treats

Ingredients

2 – ripe bananas
1 – 4 oz container of unsweetened applesauce 
1/2 cup of buttermilk
1/4 tsp cinnamon

Steps

1. Mash ripe bananas in a medium size bowl with a fork.

2. Add remaining ingredients and combine using a spatula.

3. Place cupcake liners in a muffin pan.

4. Spoon the batter into the muffin pan, filling cups a generous half full. (I got 7 frosty treats out of my batter.)

5. Place in the freezer, our treats were frozen solid in 2 hours.

Notes

  • These treats are great for pups with allergies, Stevie is intolerant to all things poultry, they are vegetarian, wheat, and soy free.
  • If you have difficulty removing the frozen treats from the muffin pan, just flip the pan over and run warm water on it for a few seconds.
  • The cupcakes wrappers are easy to remove and just peel off, no need for non-stick spray.
  • If you are running out of room in your freezer, 6 of these treats fit in a loaf pan, and would save space.

All About Fall | Gluten Free Buttermilk Pumpkin Spice Pancakes

My friend Potter, recently went for breakfast a the Neighborhood Restaurant. This is a local family owned breakfast joint located in Union Square, right down the street from Bloc 11 Cafe, where he and I both work. Potter and I share a love for all things pumpkin and he was going on and on about these pumpkin pancakes he had there, my mouth was watering just listening to him….

Of course, this lead me to an inner baking challenge, something I set myself up for on the regular,ha! I was determined to come up with delicious gluten free and/or on the healthier side pumpkin pancakes. King Arthur Flour’s gluten free pancake mix was on sale at Shaw’s, so I used this as the base for my pancake recipe. In another effort to ensure a successful gluten free recipe I researched online, but had no luck. I even posted an outcry to my foodie friends on Facebook, which yielded no recipe results… my determination grew.
In true Jess fashion, as Kate would call it.. I just made my own recipe up, ad-libbed and hoped for the best. And as luck would have it, they came out perfectly! Success.

Guten Free Buttermilk Pumpkin Spice Pancakes

Makes 8 – 4″ round pancakes

Ingredients

1 1/3 cup King Arthur Flour gluten free pancake mix
1 cup organic or local whole milk (I used High Lawn Farm from Lee, MA)
1 tsp Bragg’s organic and raw cider vinegar
1 large organic egg
3 TBS 100% pure canned pumpkin (not pumpkin pie mix)
1/2 TBS organic virgin coconut oil (melted)
1/2 tsp pumpkin pie spice

1) Measure out the milk and add the cider vinegar to it, making your own buttermilk. Let sit for 3 – 5 minutes.

2) Whisk together the egg, pumpkin, buttermilk mixture, and coconut oil.

3) Whisk in the pancake mix and pumpkin pie spice.

4) Allow the batter to sit for 10 minutes to thicken.

5) Preheat a griddle or large flat grill pan. I used our gas stove and set the burner on 6.

6) Grease pan with a square of organic butter.

7) Scoop the batter by the 1/4 cupful or I used a #16 dough/portion scoop onto the lightly greased pan.

8) Cook for 1 – 2 minutes, until bubbles form on the tops of the pancakes and the bottoms are golden brown.

9) Flip and cook for 1 – 2 minutes on the other side. Serve hot, with organic butter and organic warm pure maple syrup.

These pancakes came out amazing, and you can’t even tell they are gluten free! There is a slight pumpkin undertone with just the right amount of spice to add to the flavor, but not mask the pumpkin. I would make these again in a heartbeat. The recipe made 8 full sized pancakes and a tiny silver dollar sized pancake, the perfect size to split between Stevie and Ollie and they gobbled it right up 🙂

Notes:
– This recipe could be made dairy free by substituting the milk for coconut, soy, or almond milk and replacing the butter with Earth Balance
– A great side, as pictured above is Applegate Farms Organic Sunday Bacon. (I cooked it in the oven on 400 for 15-18 mins on a parchment lined baking sheet*) *Oven baked bacon credit goes to our friends Laurie & Gabe 🙂
– Substitution suggestions for toppings: Maple Cream, Pumpkin Butter, or Baked Spiced Apples.

Trick or Treat | Handmade Howl-o-ween

Kate and I have a great relationship. She’s the maker to my baker. We have a lot in common, but we balance each other out.
Perfect case in point Halloween…. I love Halloween, I love the decorations, the costumes, pumpkins, Halloween candy and most of all throwing a Halloween party.

Every year I come up with the idea for “our” costume, a couples costume usually that entails hours of crafting and several yards of felt. Kate humors me and every year slaves over “our” costume and in true Kate fashion it always comes out perfect. Again, Kate and I have a great relationship. She tolerates watching the “Goonies” with me on the eve of Halloween, she spends hours hand sewing costumes we’ll wear for one night, and she does it mainly because it makes me happy.

This year she crafted my idea for Stevie and Ollie’s costumes too.. taking Stevie’s crate rest into consideration we came up with this…

Pup Updates & the Kindness of Strangers | Giving Thanks

As I type this post, I realize that it’s too late for Canadian Thanksgiving & too early for American Thanksgiving. But just as I did growing up every night at supper & with every thank you note my mom made me write (yep, I still write them today), we try our best to express our gratitude each & every day for the things we feel oh-so-lucky to have in our lives.

A month ago, while I was in Portugal for work, Jess had to rush Stevie (our eldest Boston Terrier) to the emergency vet care because he was yelping, walking with a hunched back & shaking like a leaf. After a few trips to the vet, some tests and a whole bunch of worrying, he was diagnosed with a chronic degenerative condition called IVDD (Intervertebral Disc Disease, presenting in the vertebrae in his neck). The vet sent him home with medication (for pain & inflammation) and orders for mandatory 24-7 crate rest. Yes, that’s right, crate rest, 24 hours a day, 7 days a week. He has to be carried outside <–> inside & to <–> from his food bowls and he needs to spend all day every day for the next 2 months in his crate. Seriously? Seriously! It’s strange & a pain (we live on the 2nd floor and our front stairs are steep & it means we have to take both dogs out separately if one of us isn’t home). But IVDD isn’t to be messed with as it could result in paralysis and/or very expensive surgery. So we’ll all be making the best of it.

At the end of the 2 months, Stevie will get re-evaluated & hopefully his neck will have healed enough that he can be more of his normal dog self — going for walks, snuggling with us on the couch at night, etc. Sadly he won’t ever be able to jump again or do some of his best tricks (like his “stick em’ up, bang bang, play dead” show stopper) & we’ll have to watch him to make sure he doesn’t jump on the couch or bed or on the dining room table filled with pies at our next family holiday (much to our utter amazement, we watched in disbelief as he boinged straight up off the floor & landed squarely on the dining room table at Jess’s parent’s house one Christmas). But we are so lucky that he’s still part of our little family and that the IVDD was caught very early.

We celebrated Stevie’s 5th birthday with pupcakes for all (remember this recipe?) and a small sigh of relief. Being in his crate certainly hasn’t changed his appetite…

As if the above wasn’t enough stress for two concerned pet parents, Ollie, our younger Boston Terrier (who’s always been a little “special”…SHHHH!) gave us a scare a little over a week ago. I got the call from the dog walker that I’d been fearing every time I saw her name appear on the screen of my phone (up until this call they were very benign check-in emails & texts…always a relief!). She’d lost Ollie during a hike in the Middlesex Fells.

For those of you who are not familiar with the Fells, it’s piece of conservation land (reservoirs, ponds, hiking trails, etc.) just North of Boston that’s over 2,500 acres large — taking up space in 5 towns. I knew when she called me at 11:30am that she’d already worriedly traced her steps several times (before she even told me so) before she called me. She reassured me that luckily, it was a beautiful sunny day and there were lots of people out & about in the Fells. He still had his harness & tags on and was trailing a 10 foot leash so surely he’d attach himself to another group of people & someone would call us in a couple of hours. She said she’d go back & look some more & her husband was leaving work early to continue the search.

I called Jess (who was also at work) & basically lost my sh*t on the street in front the office where I work, hiccuping details through tears. And then, we both went into crazy pants solution mode. Jess: texting/calling everyone she knew who might be able to help; me: posting a picture of Ollie with the few details I knew on Facebook. We both called nearby animal shelters, vets and pet hospitals, animal control agencies, local police, etc. It became a full-time job. (I’ll insert insane thanks here to both of our jobs/bosses. We are very very lucky.) Jess went to the Fells with a friend & her dog to continue the search. Work peeps & other friends joined, too. I stayed at work to wait-for-someone-to-call-me-oh-we’ve-found-your-dog, make phone calls, wait-for-someone-to-call-me-oh-we’ve-found-your-dog, make & print posters, wait-for-someone-to-call-me-oh-we’ve-found-your-dog. But in that time of panic & complete & total solution mode, something really amazing happened — social media, did what she’s so good at doing, she put our cause on blast. I had complete and total strangers messaging me on Facebook, asking me if they could spread the news on listservs, message boards, etc. We had new (like we’ve-only-hung-out-once) friends going to the ends of the earth to spread the news even further before taking off to help in the search. I had friends emailing me saying that THEIR friends were going to the Fells to search for Ollie. There were texts and phone call offers of help. Friends who don’t even have pets were buying treats & joining the search. People, some of our nearest and dearest friends included, quite literally dropped what they were doing and joined the “bring Ollie home” party. It was totally and utterly amazingly overwhelming.

Now…the happy ending. At 5:20 PM I packed a thick folder of flyers into my bag and left for home. Jess was on her way to meet me there & we were going to come up with a new plan/approach. Ollie is small (about 20 lbs) and mostly white and I was sick to my stomach thinking about the dark, the woods and…the coyotes. I got off the T at 6:00 PM and took out my phone to respond to (yes, even more) friends offering help. That was when I got the best text ever from Jess: “Ollie’s been found”. I practically skipped the whole way home. Our dog walker’s husband had found Ollie near one of the reservoirs and he was okay.

I anxiously waited for Jess to get home with Ollie. I gave him a hug (REUNION!) & then carried him straight to the tub. He was smelly & dirty and very scratched/scraped up from his unsupervised “adventures” but he was HOME! Look how tired he was…

People are still “checking in” to see how Ollie is doing. Thank you technology, friends (new & old!), co-workers, family & concerned strangers — our hearts are still exploding with relief and gratitude.

Secret birthday prize (blueberry lemon syrup) for Kris made with fresh blueberries & lemon (just add to carbonated water to make a perfect summer soda :: recipe later this week!) yielded yummy blueberry compote “leftovers”. The compote makes a yummy spread, yogurt accompaniment or angel food cake topping especially when mixed with fresh berries.

Ollie Turns 3 | Pupcake Celebration!

I’m sure it comes as no surprise that as much as we love baking for humans, we also love baking for our pets. We also have a self-proclaimed insane tradition of buying our pups a balloon on their birthdays. Ollie is terrified of balloons and so…it was decided, we’d get him some pupcakes to celebrate his day instead.

There are a few local cupcakeries that also sell a pup friendly version of their sweet delights, but 1) we love baking 2) we had all of the ingredients in our pantry/refrigerator 3) it’s cheaper…but most important of all, 4) we know exactly what’s inside. And no mystery ingredients means no potential allergens (Stevie has a wicked intolerance to all things poultry). Yay!

Now onto the important stuff…

Pupcakes for Ollie

Ingredients

1 cup whole wheat flour
rounded 1/4 cup whole oats
1 tsp baking soda
1/4 tsp cinnamon
1/4 cup all natural organic creamy peanut butter (no sugar added!)
1/4 cup unsweetened organic apple sauce
1 cup shredded carrots (I finely chopped a couple of handfuls of baby carrots in the food processor)
1 tsp vanilla extract
1/4 cup honey*
1 egg

*If you don’t want to add the sweetener, just substitute the same amount of the apple sauce. Dogs don’t need the extra sugar but we made these as a once in a blue moon treat so I sweetened them a bit with honey.

Steps 

1. Preheat oven to 350 degrees & spray a muffin pan with non-stick spray or line with paper liners.

2. With a whisk, mix the flour, oats, baking soda & cinnamon in a medium bowl.

Baker’s tip for measuring honey: Spray the measuring cup/spoon with a little bit of non-stick spray before pouring the honey into it. The honey will slide out — no messy honey fingers or lost sweetness.

3. Add the rest of the ingredients & mix well (I used a wooden spoon, but the same whisk you used in step 2, is fine).

4. Spoon the batter into the muffin pan, filling cups a generous 2/3’s full. (I got 8 pupcakes out of my batter.)

Baker’s tip for baking partially filled muffin pans: If your batter doesn’t fully fill all of the spots of the muffin pan, pour a little bit of water into each empty cup (not too high or it will be tricky to remove from the hot oven — 1/3 full or so). This will ensure even baking. Just remember to use extra caution when removing the pan from the hot oven!

5. Bake at 350 degrees for 25 minutes or until a cake tester/toothpick comes out clean. (Our oven is a little unpredictable so I rotated the pan after 15 minutes to ensure even baking.)

6. Allow to cool completely on a wire cooling rack…and…let the celebration begin!

Very patient pups! (Sorry there are no action shots of them eating…they went completely & overwhelmingly crazy for these birthday treats.)

Notes

  • This recipe could easily be made gluten free for dogs with gluten/wheat allergies — just be sure that the oats you’re using are gluten free (Trader Joe’s Whole Oats are affordable & labeled gluten free).
  • Be creative when baking for your pup but always do your research to make sure your ingredients are dog safe! For example, while it might be tempting to add raisins to this recipe, please don’t. They can cause toxicity/death in dogs. Add a handful of fresh blueberries instead. YUM! Here’s a helpful list of people foods to avoid giving your pup (source: ASPCA). When in doubt, call your vet or leave it out.
